Pie Crust Perfection

Thanksgiving is the holiday of pies! Cherry pie. Pumpkin pie. Pecan pie. Chocolate pie. So many pies! No pie is created equal, though. Some require a little pre-baking. You may need to completely pre-bake a crust if your pie filling requires no baking, or partially pre-bake it if the filling requires a short cooking time. But if you’re like most people, pre-baking can be a bit of a problem. How do you pre-bake a pie crust without it puffing up on the bottom or shrinking in on itself?

 

The answer is quite simple. You just have to weigh it down! 

 

Line your pie crust with foil or with baking parchment paper and add pie weights to the inside to weigh the crust down. If you don’t bake enough to want to buy actual pie weights, you can just use a bag of dried beans! Just make sure the bottom of the lined pie crust is covered before popping it in the oven.
